Keto Instant Pot Chicken Noodle Soup

Chicken noodle soup is a staple meal in many households, so we have created a Keto Instant Pot Chicken soup to fit your macros! If you are the only Keto person in the house, this recipe creates many high-protein portions that you can use for meal prep. The soup would freeze well in individual containers for quick on-the-go meals.

Why are the carrots, onion, and celery used?

This trifecta of ingredients creates what is called a mirepoix. It gives the characteristic background flavor to the soup. While carrots are higher in carbs than most vegetables, they are used in small amounts, and each portion's overall carb count is still Keto.

What is the best chicken to use?

The best chicken to use is organic chicken breasts. You can also use chicken thighs, but you must copy this recipe within the app and adjust it by adding chicken thighs instead.

Why do you need to add water back into the Instant Pot after cooking?

When there is a lot of water in the Instant Pot, it will take a long time for it to come up to pressure. To mitigate this, we added enough water for the contents to not burn. Once the meat and vegetables are cooked, and the pot is reopened, we added the remaining water back into the pot. The saute function is turned on to heat up the additional water to serving temperature.

What are the Low Carb noodles used?

The Low Carb noodles are palmini lasagna sheets cut into thin noodle strips. We like to cut them ourselves to control the noodles' thickness. You can use palmini linguini noodles, which are already precut, if you would like to! We love palmini for noodles because they do not get soggy in the broth!

    Peel and dice the carrots into small pieces. Trim and dice the celery into small pieces. Peel and dice the onion. Mince the garlic. Place the pot into the Instant Pot. Turn the "Saute" function on to get the bottom of the pot hot.

    Once the Instant Pot reads “hot”, add the avocado oil. Then, add in the diced carrots, celery, onion, and minced garlic cloves. Stir occasionally until the vegetables start to become translucent. Add in ½ tsp black pepper and ½ tsp kosher salt.

    Add ½ of the chicken broth to the pot. Julienne the palmini sheets into thin strips. Dice the chicken breast into 1" pieces or smaller if desired.

    Add the chicken to the pot, the bay leaf, and the palmini noodles. Place the lid on the Instant Pot and set the timer for 25 minutes. Once the time has elapsed, you can do a quick release.

    Add in the remaining chicken broth. Turn the pot on the "Saute" function to bring the mixture to a simmer. Taste and adjust by adding more salt or pepper to taste.

    We like to use kosher salt for the beginning seasoning steps above, but use fine pink salt as a finishing step at the end to bring out all the flavors. Serve hot!

      Made this with chicken bone broth and skipped the noodles. It was the best soup I ever made . The chicken was so tender with the IP and rye bone broth had the house smelling wonderful!
