This mayo free slaw is packed with crunchy cabbage and onion, crispy fried prosciutto and tossed in a lemon mustard dressing.
This makes a great alternative to slaw with mayo, perfect served with chicken or pork.

Ingredients
Prosciutto

Olive Oil
2 tablespoon
Cabbage
1 cup
Red Cabbage
½ cup
Red Onion
½ small
Lemon Juice
½ tablespoon
Mustard
½ teaspoon

Step 1
Heat half a tablespoon of olive oil in a skillet over a medium heat. Add the prosciutto slices and cook through until crisp and golden. Set aside to cool.Step 2
Very thinly slice the cabbage and onion and add to a large mixing bowl. Toss to combine.Step 3
Add the remaining olive oil, lemon juice and mustard to a small bowl. Season with salt and pepper and whisk together to combine.Step 4
Drizzle the dressing over the slaw and mix well to coat.Step 5
Very thinly slice the prosciutto into strips and add to the slaw before serving. Toss to combine.
