Easy Keto Sufganiyot

There's no shortage of Keto Hannukah recipes your entire family can enjoy during the holidays. A traditional sufganiyot is a jelly donut usually served for Hannukah celebrations. Unfortunately, traditional sufganiyot are packed with carbs, and are not Keto-friendly. This simple recipe however, is equally delicious, but with just 3 grams of net carbs per serving they are suitable for your Keto diet. The recipe will give you ten donuts, so feel free to make several batches for the upcoming holidays. If you're using powdered sweetener for dusting, make sure to dust them just before you plan to serve them. Otherwise, the sweetener will soak into the donut.

How to store the leftovers?

Unlike the traditional sufganiyot, these donuts will last for a couple of days. Store them in air-tight containers, and they will remain fresh. Optionally, heat them in a microwave for 30 seconds before serving. You can also freeze the leftovers for up to 3 months.

What type of jam to use?

Feel free to use your favorite type of Keto-friendly jam, as they pair perfectly with various flavors. You can also use some melted, sugar-free chocolate, pastry cream, or other fillings of your choice.

  • Step 1

    Crack the eggs into a large bowl. Add the melted butter and vanilla extract. Using a hand mixer, beat until fully combined.

    Add the almond flour, psyllium husk powder, erythritol, baking powder, and xanthan gum to another bowl. Mix until completely combined. Make sure to break up any lumps.

    Add the dry ingredients to the wet ingredients. Mix until completely combined. Refrigerate the mixture for 10 minutes.

    Remove the mixture from the refrigerator. Scoop out two tablespoons of the mixture and shape it into a ball. Repeat until you have used all the mixture.

    Heat about ½ cup of oil over medium-high heat. Fry for 5-6 minutes, turning occasionally. If the balls are browning too fast, reduce the heat to medium.

    Take the balls out and place them on kitchen towels to drain the excess oil. Using a chopstick, poke a hole into a donut about ¾ of the way to the far side of the donut. Fill each donut with Keto jam and optionally sprinkle with some powdered erythritol.

    Sufganiyot are best served fresh, as the powdered sweetener will soak into the donut. They pair perfectly with a cup of coffee or tea. This is an excellent, Keto-friendly treat for the entire family.
