There’s nothing like a big plate of chicken strips! These Keto-friendly strips are crusted in shredded coconut and almond flour. For the best results, use thinly shredded coconut. I dipped the strips in dijon mustard, but feel free to dip them in your favorite low carb dip or dressing.

Recipe Steps

  • Step 1

    Pound the chicken breasts between two pieces of parchment paper so that they are of uniform thickness. Cut into strips and toss with the olive oil.

    In a small bowl, whisk an egg. In another small bowl, combine the almond flour, shredded coconut salt, garlic powder and onion powder.

    Dip a chicken strip into the egg mixture, then dip into the coconut mixture and toss until the chicken strip is coated. Place the strip onto a parchment covered sheet pan and repeat until all of the chicken is coated.

    Preheat your oven to 375 degrees Fahrenheit. Bake for about 15 minutes, then broil for a few minutes until crust on the chicken begins to brown. Watch the chicken closely to make sure it doesn’t burn! Remove from the oven and dip in dijon mustard!

    These were really good. I agree the mustard dipping sauce is off. Day one mixed the Dijon mustard with ranch. Day two (leftovers) I used a McDonalds honey mustard packet. I liked this better and had enough carbs to fit it in.

        These are great. Added a pinch of Cajun seasoning. Even hubby loved them! You can do these in a fry baby or an air fryer. Both are easy to do.

          Added a little cayenne pepper, baked them in the air fryer for 10 min at 400. Perfect with some lime.

            Ok so again the dry ingredients were not enough for 1lb of chicken. So I suggest upping it a bit. The mustard smell is strong but it actually tatstes good. I wanted to dip in ranch or blue cheese dressing- so I recommend it. I was out so that stunk but I liked it by itself.

                  Dijon mustard seemed like the wrong sauce, so I made a sweet and spicy dipping sauce. 2servings of sauce was made with 1tbsp Sriracha, 1 tbsp mayo, 1 tsp Swerve brown sugar substitute and 1quick squirt of liquid stevia. Just throw it in the microwave for 15 seconds and stir. It really reminded me of the chili sauce I've had in restaurants with coconut shrimp! I should mention that I have a high tolerance for spicy food (love it), so if you don't, you may want to decrease the ratio of mayo to Sriracha.

                  Cas9508 get yourself a food scale, Then look at beginning of every recipe and it tells you the servings in the dish. Weigh the total and divide the serving into that number.

                      I make from her recipe total of 500 gms meat divided by 4 servings makes 125 gms meat per serve.which for me roughly is half a cup

                    Made this tonight. So good. Unfortunately I didn't have eggs or almond flour and didn't want to run and get any so I used oil and no flour. Still good!

                            You can also use crushed pork rinds to “bread” the chicken or shrimp or any kind of meat. Pork rinds have 0 cal, 0 carbs.

                              Just finished with this meal. Very quick and easy. Not sure about the Dijon mustard 🙃, but another dipping sauce would be great. Please share the lemongrass sauce (prev. review) with all. Sounds delicious. I made mine in the air fryer for eight minutes set at 370. Please don’t use olive oil with this. The smoke point is way too low for this type of oil ( should never be heated > 200 - 250) . Avocado oil is much better suited for higher temperatures.

                                Quick tip: 1. To eliminate the messy hands situation; keep one hand for putting the chicken in the egg wash & placing into dry mix : use the other hand to coat in breadcrumbs and remove ( one hand for wet & one hand for dry) 2.Cook for a few minutes in the oven and then finish off in an airfryer (super cheap to get one nowadays) 3. Personal fave dipping sauce - homemade lemongrass (tastes like a Thai dish) amazing 💖
