  • Step 1

    Preheat an oven to 375 degrees. In a bowl, combine the ground beef, pork, first amount of salt, pepper, allspice, nutmeg, onion powder, egg, parmesan, and cauliflower rice. For the cauliflower rice, it’s important to use fresh cauliflower (not frozen). Either grate the cauliflower or pulse in a food processor and squeeze out any excess liquid before adding to your meatloaf mixture.

    Press the meatloaf mix into a loaf pan. Use a toothpick to poke 5-6 holes in the loaf to help avoid excess shrinking when baking.

    Cover the top of the pan in foil and bake for 30 minutes. Then, remove the foil and bake uncovered for an additional 40 minutes. Set aside to cool once done. You may wish to drain away some excess fat that may build up, due to the pork.

    During the final round of baking, make the cream sauce. Heat the heavy cream in a small pan over low heat. Then, melt in the provolone cheese, whisking until fully melted. Once the sauce has thickened, stir in the remaining salt and sage. Set the pan aside to cool and thicken until serving time.

    Once the meatloaf has cooled for serving, slice it into 8 slices. Transfer each slice to a serving tray and spoon the sauce over the meatloaf. This recipe happens to be garnished with an additional sprinkling of nutmeg and fresh parsley!

    Really wonderful taste and easy to make. It’s become one of my signature dishes. It’s a great alternative to the tomato based meatloaf.

      I’ve never liked meatloaf - even pre keto. But my husband does and after trying this I love it! I add a bit of sautéed onion, tomato and garlic (which increases carbs a bit) and dried (low carb) beef stock for flavor. I also use fresh sage for the sauce.

        Can this be frozen with the sauce

          If freezing, keep the meatloaf and sauce separate from each other. Re-heat individually before serving again.

        I tweaked it using half lb of pork and subbing the weight in with more cauliflower (I've got some to use up). Turned out absolutely amazing!!! Great texture and flavor.

          It was ok. Wasn’t a fan of the flavor of the meatloaf from the nutmeg and allspice. The cheese sauce was Pretty bland.

                This is amazing! I thoroughly enjoyed it thank you so much for the recipe. I’ve been on keto now for about two weeks and I’m feeling better. I’ve lost close to 10 pounds and I have 19 more to go.
