There are many easy Keto recipes for pizza crust on the internet, but we think this one is the closest in flavor and texture to a regular pizza crust.
Should you be worried about the sugar in the dough?
While it is a no-no to add sugar to any Keto recipe, this recipe is an exception. The yeast will feed on the sugar and produce carbon dioxide, aka the bubbles that cause bread and baked goods to rise. So basically, the yeast will activate by consuming the sugar, leaving you none.
How to make the best Keto pizza
A pizza isn’t complete without a perfect crust, and following a Keto lifestyle shouldn’t stop that. To make the dough, we have used fathead dough as a base, but lightened it up using psyllium husk and yeast. The result is a risen, pillowy crust. We don’t recommend omitting the psyllium husk nor the yeast because that will yield a dense and unappetizing base.
There are some critical points to baking a successful Keto pizza. Firstly, to bloom the yeast, you must use lukewarm water, which is around body temperature. If you use hot water, you will kill the yeast, and if you use cold water, the yeast won’t activate. Secondly, you half bake the crust before adding the rest of the ingredients. If you bake the pizza with its toppings from the start, it won’t rise as much.

Yeast, Active Dry

Step 1
To bloom the yeast, add it to a bowl with the sugar. Pour in the water, making sure it is lukewarm. Whisk and place the bowl in a warm place for 10 minutes. The yeast is ready when there is foam or bubbles on top.Step 2
Add the almond flour, psyllium husk, and baking powder to your food processor. Pulse for 10 seconds then add the egg and the bloomed yeast mixture. Pulse for 10-20 seconds until combined.Step 3
In another bowl, add ½ cup of grated mozzarella cheese. Heat in the microwave for 20-30 seconds until melted. Stir until smooth.Step 4
Add the melted cheese to the food processor along with the dough. Process until a uniform dough forms. Scrape the sides and process again.Step 5
Transfer the dough to an oiled bowl and try to smooth the top with a spatula. Cover the bowl with plastic wrap. Let it proof in a warm place for 1 hour.Step 6
Preheat your oven to 400 F/ 200 C. Add a little oil to your palms, and transfer the dough ball onto a piece of oiled parchment paper. Press to flatten until it is 20-30 cm in diameter, depending on how thick you like your pizza.Step 7
Transfer the parchment paper with the dough to a baking sheet. Bake for 5 minutes until slightly golden. Take it out of the oven and spread the pizza sauce.Step 8
Sprinkle 1 cup of mozzarella cheese evenly on the surface. Bake for 7-10 minutes until the cheese is bubbly and slightly golden. Take it out of the oven and sprinkle the dried oregano on top.Step 9
Cut the pizza into 8 even slices. Serve immediately.
