Keto Protein Balls

These delicious Keto protein balls are packed with nutrient-dense seeds, nuts and healthy fats - perfect for a daytime snack. Our low carb energy balls are prepared with pumpkin seeds, sunflower seeds, ground almonds, chia seeds, dried cranberries, almond butter, coconut oil and a little low carb sweetener. These crunchy snack-sized bites are a great way to add a little extra plant-based protein and Keto-friendly fats to your day.

Can I Use Butter?

These plant-based Keto protein balls are bound with almond butter and melted coconut oil for both fats and flavor. If you are not following a plant-based diet and don’t wish to use coconut oil, you can swap this directly for melted unsalted butter. Follow the recipe as directed, swapping the oil for butter. Please be sure to adjust your macros to account for any changes made to the original recipe.

Are Cranberries Keto?

Although dried fruit is often not approved on a low carb diet, cranberries are a popular exception. Dried cranberries are a great way to add a hint of sweetness and a chewy texture to your Keto energy bars, protein balls, cookies or cakes. They may be enjoyed in small quantities on occasion and should be either sugar-free, reduced sugar or sweetened with natural fruit juices. If you would rather omit the cranberries from this recipe, you may do so. You can sub for some unsweetened chocolate chips if preferred.

Recipe Steps

  • Step 1

    Add the pumpkin, chia and sunflower seeds to a food processor. Add the ground almonds and erythritol. Pulse to combine, breaking down the seeds into small chunks. Transfer the crumbly nut mixture to a mixing bowl.

    Add the almond butter, melted coconut oil and cinnamon to the bowl. Mix together well to combine. The mixture should be almost dough-like and starting to hold its shape.

    Roughly chop the dried cranberries. Add the cranberries to the nut mixture and stir through. The fruit should be evenly distributed throughout.

    Divide the mixture into 10 even portions. Roll each portion into a ball with your hands and arrange on a plate or small tray. Transfer to the fridge for 1 hour to set firm. Once set, store in an airtight container until ready to eat.
