This fantastic Bacon-Wrapped Jalapeno Popper Chicken is an excellent addition to your Keto weeknight dinners. It’s super easy to prepare, and you only need about 15 minutes to put everything together and let the oven do the rest. This is one of our favorite Keto cheesy dinners that can be served to the entire family, whether Keto or not. This mouthwatering dish is also very filling and will keep you full for hours. You can serve it as it is or along with your favorite low-carb side dishes, such as mashed cauliflower, fresh vegetable salad, or grilled veggies. Enjoy!

Yes, you can prepare this recipe in advance and store it in the fridge until ready to serve. Gently reheat in the oven and serve with your favorite sides. However, we do recommend serving this lovely meal directly from the oven – with perfectly crispy bacon.

How do substitute cheddar in this recipe?

You can substitute cheddar with some freshly grated parmesan. Monterey Jack would also work perfectly here.

  • Garlic powder

    Shred the cheddar cheese. Add the shredded cheddar and cream cheese to a bowl. Mix to combine.

    We recommend you wear gloves to protect your hands when handling jalapeno peppers. Cut the jalapeno peppers in half, lengthwise, and remove the seeds. Stuff each half with some of the prepared cheese mixture. Set it aside.

    Rinse and pat dry the chicken breasts. Using a sharp knife, carefully cut a pocket into each chicken breast. Put the two jalapeno halves together and place them inside the pocket.

    Preheat the oven to 200°C (400°F). Tightly wrap each chicken breast with bacon and place in a baking dish lined with parchment paper. Bake for 35 minutes.

    Remove from the oven and transfer to serving plates. Serve immediately.

    I haven't made this yet, but as I do with all recipes I find here, and other places, I replace the ingredients with my own brand name items i.e. cream cheese (generic), I replaced with Philadelphia brand. I'm using 6 ounce chicken breasts, so replaced the "medium" with th actual ounces of the brand I use and will be eating. After I did this with whatever ingredients were listed generic and replaced them with equal amounts of my own ingredients, it reduced the carbs by about half, calories about 20%. What I'm trying to say, is that I know this recipe is going to be awesome, but I recommend that others do the same if they are trying to lose weight keto-style. Just click on the right-hand dots, choose Copy to My Foods and then edit it to reflect what you will actually be using. Hope this helps some newbies, like I once was. 14 months later and I am 52 pounds lighter!

      Pretty good! 35 minutes was a little too long! Also, I diced up the jalapeños and just mixed with the cheeses! Give it a try for sure!
