Low Carb Best Chili Cheese Fries

Who would pass up loaded cheese fries? These Keto chili cheese fries are made with air-fried zucchini fries. They’re the perfect consistency for loading up with toppings and eating with a fork. You’re going to make a very simple beef chili that’s completed in just two steps. After the chili goes on top of the zucchini fries, you make a scratch-cheese sauce. Pour the cheese sauce over the chili, then add some chopped green onion before you dive in. Again, it’s recommended you eat this messy but fun dish with a fork!

Is zucchini a Keto vegetable?

Zucchini (or courgette) is a very Keto-friendly vegetable that is used in many Carb Manager recipes. It makes a great side dish cooked as is, but zucchini can also be used as a substitution for other non-Keto products. Spiralize zucchini into noodles and make pasta with them. Slice zucchini thin and make a “potato” au gratin. Shred zucchini and just add egg and parmesan cheese to make a substitute for pizza dough!

What is tapioca flour?

Tapioca flour is made from cassava root and is considered a starch. It may also be called tapioca starch, in that case. On the Keto diet, tapioca flour is a good Low Carb thickening agent for soups, sauces, and chili. It can be used in Keto baking as well. Since it’s starch, there are some carbs in tapioca flour, so use it in moderation.

I don’t own an air fryer

You might be tempted to bake zucchini fries in the oven, but they’ll only become soft. Instead, fry zucchini fries in a pan on the stove. Don’t use any oil on your zucchini, and make sure you’re using a good-condition pan so it doesn’t burn. The zucchini fries will come out similar as if they were air fried.

  • Step 1

    Turn on an air fryer to preheat to 375 F (190 C). Meanwhile, cut zucchini into long, rectangular fries while making sure to keep them all similar in size. Add the zucchini fries to a large mixing bowl and toss them with seasoned salt, pepper, and garlic powder. Then, arrange the seasoned fries on your air fryer tray(s).

    Cook the zucchini fries in your air fryer for approximately 10 minutes or until they’re tender with browned skins and edges. Arrange the zucchini fries on a plate to rest and cook while you make the other components of the dish. Make the chili first, then the cheese sauce.

    To make the chili, break up ground beef in the bottom of a pot on the stove. Stir the olive oil, salt, pepper, onion powder, garlic powder, chili powder, and paprika into the ground beef. Then, heat the beef over high heat while stirring until the meat browns.

    Reduce the heat to its lowest setting, then stir tapioca flour into the beef. Make sure the beef is coated in flour, then pour beef broth into the pot. Cover the pot, bring the broth to a boil, then simmer the pot on the lowest heat setting possible. Let the chili cook without a lid until it reduces to a thickened stew-like consistency.

    Leave the chili aside to cool first before you add it to the plate of fries. Make the cheese sauce next by combining heavy cream and butter in a sauce pot over low heat. Whisk the ingredients until the butter melts, then whisk cheddar cheese and salt into the pot. Raise the heat if necessary, and whisk the sauce until it just comes together.

    Remove the cheese sauce from the heat. This will need to cool as well for a few minutes. Pour the chili over the zucchini fries, then pour the cheese sauce on top. Chop green onion, and sprinkle it over the chili cheese fries. This is a messy dish, so you’ll want to eat it with a fork!
