These are so deliciously, chocolatey and really satisfies my chocolate craving. I reach for these when I need to fill up on some healthy fats in between meals. These are quick and easy to make and stores in the fridge for up to 2 weeks. Freeze them for an extra cold treat.

  • Walnuts

  • Coarse Kosher Salt by Morton

  • Almond Butter

    ½ cup

  • The Ultimate Icing Sugar Replacement by Swerve

    ½ cup

  • Vanilla Extract

    Vanilla Extract

    ½ teaspoon

  • Chocolate Chips, Sugar Free

    Chocolate Chips, Sugar Free

    ¼ cup, whole pieces - regular

Recipe Steps

  • Step 1

    Line a small baking sheet with parchment paper. In a food processor, combine all the ingredients except the chocolate chips. Blend until the mixtures turns sandy and then starts to form a ball.

    Add the chocolate chips last and pulse until there are small pieces of chocolate chips throughout.

    Form into 20 1-1/4” balls and place on the parchment lined sheet. Chill in fridge until firm. Store in fridge up to two weeks and freeze them for up to a month!

        Do I have to use "kosher" salt even if I'm not Jewish?

          Kosher salt is the preferred salt of chefs because it lacks impurities, including iodine. Much of "kosher" salt is not certified as kosher. It is only named as such because it is the preferred salt when koshering meat for the reasons mentioned above and due to its texture. It has nothing to do with a user's religion. Haven't you ever wondered how iodized table salt is perfectly cut into symmetrical crystals? It's not found in nature that way, it's cut with chemicals. You would be hard-pressed to find a chef anywhere and of any religion that cooks with table salt. I'm not sure why you would rate down this recipe based upon a single ingredient.

            I used a tiny ice cream scoop and ended up with 24 bites. Also, instead of almond butter, I used Richards creamy peanut butter, which has only 1 net carb per serving. I made my own "powdered sugar" by running monkfruit through my bullet blender. You can do this with any solid sugar substitute. Run the numbers on your recipe on your own, because my bites ended up at 50 calories per each and 1 net carb each. This seems like a good base recipe to make your own flavor combos. Store in the freezer because otherwise they are pretty soft.

            Anyone has issues with the serving size? Just by pure math, the total grams of the recipe is less than the total grams of the balls. There’s no way 1 ball can be 3.5 oz/ 100g if the ingredients for 10 balls is around 210g.

                  I had to add more peanut butter because my balls wouldn't stick together. The dough came out really dry. It tasted delicious though.

                      I didn't have enough almond butter, so I used both crunchy peanut and almond butter. The crunch peanut butter added a great extra crunch to the chocolate chips.

                            Delicious! We started calling them Timbits it’s due to look and they are great snacks on the go! Query: has anyone tried baking them or modifying them to be more of a cooked brownie treat?

                              LOVED this !!! After not having anything « sweet » for a month, 1 bite was such a pleasant surprise !! It melts in your mouth and is simply perfect when you get a little sugar craving !!! I don’t feel the guilt and am satisfied so quickly !! Thank you for this recipe 😍
