Step 1
Add the almond flour, coconut flour, xanthan gum, baking powder, and salt to your food processor. Pulse to combine. If you don’t have a food processor, you can whisk these ingredients into a bowl.Step 2
Pour the vinegar and pulse a little more until distributed. Add the egg and cream cheese and pulse until the dough forms into a ball. Wrap the dough and let it sit for 10 minutes.Step 3
While the dough is resting, preheat your oven to 180C/350 F and line a baking sheet with parchment paper or aluminum foil. Unwrap the dough and divide it into 4 equal pieces. Wet your hands with water to prevent the dough from sticking to your hand.Step 4
Poke a hole in the middle of each ball using your finger, and stretch to form bagels. Brush the surface with the egg yolk. Sprinkle the bagel seasoning on top and transfer the baking sheet to the oven.Step 5
Bake for 12-15 minutes until golden and cooked through. Allow them to cool completely before handling. You can serve them plain or with your preferred spread.

These were teeny tiny, but tasty - bitty baby bagel bites! I had to add seven minutes to the cook time to get them to brown up nicely, but I think that is my oven misbehaving... Next time I make them, (and there will be a next time,) I plan to double the recipe and make four bigger bagels.

These are fantastic, small but great! Followed the recipe exactly as written. I find any keto “bread” always is so crumbly. These were a great substitute. My husbands only complaint is that they are small. Will make again for sure!

These are cute. No flavor, not chewy. Nothing like a bagel. These are tiny, so dont be deceived by the pic. Putting cream cheese on them just accentuates the nothing texture. Much better recipes out there.

I replaced the xantac by grouded flax seeds. Never formed a dough so I added a bit more almond flour to be able to manipulate... but still, i decided to go forward and made the 4 pieces, i manage to add a hole in the center. Came out really good! Ill redo it for sure :)

This looks great but I absolutely abhor coconut flour in anything savory or sometimes even sweet it overpowers everything to me- have you made this with just the almond flour? I know coconut is used many times because they dont come out right without it?

I couldn’t get the dough to form into a ball, so I added a bit more cream cheese and one extra egg plus about 2 T of water before it formed into a ball. I also couldn’t poke a hole into the center without it falling apart, so I left them in balls. Easy enough to make though! Also, this made 6, not 4 bagels
