Lime, coconut, and fresh basil all combine to make this healthy Keto dessert recipe. Plain Greek yogurt and coconut cream are whipped together, while fresh lime zest, lime juice, and fresh basil leaves are blended with a little sweetener before combining with the whipped yogurt. This healthy Keto recipe results in a fresh and zingy palette cleansing cream.

Are there any recipe variations? If you find the basil a little strange, you can leave it out and add additional citrus zest from lemons. Ensure to use unwaxed organic lemons and limes. Another excellent recipe variation is to blend frozen blueberries or raspberries into the cream.

Can I substitute any ingredients? You can substitute all the Greek yogurt for canned coconut cream. Be sure to only use the solid cream and none of the liquid as it will not whip and remain a runny liquid. You will need about 2 cans. For best results, choose a quality canned coconut with a high coconut fat content - above 70%. Place the can in the fridge overnight to thoroughly chill before whipping.

Can I adapt this recipe to other diets? Make this recipe dairy-free by substituting Greek yogurt for a plant-based alternative. Coconut yogurt is a great option but always check the label for any added sugars.

    Grate the zest of 1 large lime and juice it to yield 4 tablespoons of juice. Add the lime zest, lime juice, basil leaves, and powdered erythritol to a blender. Blitz to a puree.

    Add the Greek yogurt and coconut cream to the bowl of a mixer with the whisk attachment and whisk on high speed for 3-4 minutes until light and fluffy. For best results, place the can of coconut cream in the fridge overnight to thoroughly chill before whipping. Only use the solid cream, not the liquid.

    Add the lime and basil mixture to the yogurt cream. Whisk until combined. Check for sweetness. You may wish to add more powdered erythritol or lime zest to your liking.

    Divide the mixture between 4-6 glasses. Top with unsweetened shredded coconut. Keep in the fridge before serving.
