    Cook the bacon over medium-low heat until crisp. Remove from the pan and transfer to a plate lined with paper towels to drain. Crumble the bacon and set it aside.

    Peel and finely chop the onion. Drain away all but about two tablespoons of bacon grease. Return the pan to medium heat. Add onions and cook for 5 minutes.

    Thinly slice the mushrooms. Peel and mince the garlic. Add the mushrooms and garlic to the pan and stir well. Cook for 5 minutes or until the mushrooms are golden brown.

    Add the soup, almond milk, and bacon. Stir to combine. Optionally, season with some salt and black pepper to taste.

    Grate the cheese. Add the cheese to the pan and stir well. Cook for another 1-2 minutes.

    Fold in the green beans. Reduce the heat to medium-low. Cook for 5 minutes.

    Preheat the oven to 175°C (350°F). Grease a 28x15cm (11x6 inch) casserole pan with cooking spray. Pour the mixture into the prepared dish and top with fried onions.

    The onion rings contain dextrose! That's not keto. Although this sounds like a delicious and almost identical recipe to regular green bean casserole, I think that there are healthier choices out there including making your own crispy onions for the top with almond flour, and not using a condensed can of cream of mushroom soup.

      Agreed. What can we substitute for the cream of mushroom soup though? You could use pork rinds instead of crispy onions.
