  • Step 1

    Preheat the oven to 425 degrees. Line a large baking sheet with parchment paper, and spray it well with pan spray.

    Peel the zucchini, and slice it into fries that are about ½-inch X 3 inch. The yield should be about 1 lb, so keep this in mind when selecting your zucchinis for this recipe. They will lose a LOT of water weight in the oven!

    In one bowl, whisk together two eggs and set it aside. In a second bowl, combine the remaining ingredients.

    To coat the zucchini fries, dip them one by one in the egg mixture, let the excess egg drip off, and then roll them in the dry mixture. Then, gently set them on the lined baking sheet.

    Bake the zucchini fries in the oven for about 30 minutes, flipping them over halfway through with a spatula. For golden brown edges, you can cook them under the broiler for a minute or two. Keep an eye on them to avoid burning.
  • Step 6

    Serve hot with the optional garnish of lemon zest and/or chopped parsley!

    These are so good. But CM needs to update the information in the recipe. The amount of flout is not right. Should be 1 1/4 cup almond flour. And the carbs seem really high. Please CM help all of us who really like these feel good about eating them.

      It's 5 servings of 1/4 cup servings which equals 1 1/4 cups.

      I loved these I am a bit confused about amount of carbs etc It looks like 4 servings 7.3 net carbs and 336 calories per serving??? Seems like a lot for zucchini

        I didn’t use all that almond flour. 1 cup of each parmesan and almond flour. Added a bunch of Italian spices -that’s up to you-but it does need salt in your breading. I also added red pepper flakes into my breading maybe a quarter of a teaspoon. Gives it that extra kick. Yum! All extra breading can be stored in a bag and placed in your freezer for next time.😁

            The receipt calls for 5 1/4 cups of almond flour is this correct? Seems a lot, just want to count the right net carbs, please help me and how many does this serve?

                These turned out great. I also read the recipe wrong and mixed all of the stuff together in with the egg and so I did half with the batter and then half with the breading after I realized my mistake. The ones with the breading were delicious but the ones with the batter we’re good to kind of like a mini quiche.

                    One cup is 128g or 4.5 oz and 1/4 cup is 32g or 1.13 oz. This is per a metric conversation chart I found for all purpose flour. Most keto recipes are 1:1, so this conversation should work. Cheers from across the pond :)

                  Absolutely delicious! New favorite for zucchini! I dipped the zucchini in the cheese/flour mixture before dipping in the egg then dipped again in the cheese/flour mixture after dipping in the egg. It held together very well doing it this way. These are incredibly delicious and I will be making this regularly! If you are wondering about how much flour, it's 1 & 1/4 cup.👍

                    I contacted CM about the flour in this recipe its 1 1/4 cup of almond flour..CM is working on correcting errors as it relates to this app...so please send them messages so they know when a recipe ingredients are in error..... loved this recipe.

                    Delicious! We doubled up (not necessary) and baked half and fried half in canola oil. Be sure you flip them half way through. They cook fast.

                      I made these and replaced the almond flour with pork rind crumbs and they are awesome. Added garlic, and onion powder and black pepper. Yummy

                          This recipe sounds amazing but does anyone know if I can substitute almond flour with coconut flour?

                            Yes, my dietitian explained that all recipes are subject to slight substitutes because there are so many keto alternatives. Everyone has different taste preferences and financial restrictions, I personally substitute almond flour with coconut flour for a few reasons. Coconut has incredible health benefits in general. I prefer the taste more, and it is also about half the cost of almond flour.
