Keto Zucchini, Bacon and Halloumi Skewers

These flavorful Keto kebabs make a great lunch or dinner option, served with your favorite low carb sides. Our low carb skewers are loaded with tender zucchini and halloumi, marinated in garlic, lemon and thyme. After marinating, the halloumi pieces are wrapped in bacon before being threaded onto wooden skewers and oven-baked until golden.

Can I Use a Different Cheese?

We have used halloumi cheese for our Keto kebabs as its structure and texture make it perfect for baking as it remains firm. If you would like to use an alternative cheese, we would recommend selecting another firm cheese with a high melt point. Queso blanco and paneer cheese would be good options and can be marinated and cooked as you would halloumi. Please be sure to adjust your macros to account for any changes made to the original recipe.

Serving Suggestions

Our Keto kebabs are perfect served as a lunch option with a light low carb salad or Keto pitta breads. Alternatively, these can be served as a dinner with a portion of cauliflower rice. These would also make a great addition to a BBQ grill, served with your favorite low carb BBQ sides!

    Dice the halloumi into 8 even-sized portions. Dice the zucchini into 12 half-inch thick, even-sized chunks. Add the halloumi and zucchini to a mixing bowl. Add the thyme leaves, garlic powder, olive oil, lemon juice, salt and pepper. Toss to combine. Set aside to marinate for 30 minutes. While marinating, soak 4 wooden kebab skewers in water.

    Preheat the oven to 400 degrees Fahrenheit. Take a piece of marinated halloumi and wrap it tightly in a slice of bacon. Repeat with the remaining bacon and halloumi.

    Take a wooden skewer and thread it with a piece of marinated zucchini, then some bacon-wrapped halloumi, another piece of zucchini, another piece of halloumi, and a final piece of zucchini. Repeat with the remaining ingredients on the other three skewers.

    Transfer to the oven and bake for 20 minutes. The halloumi and zucchini should be tender, and the bacon should be crisp and golden. Serve with your favorite Keto sides.
