What is fathead dough?
Fathead dough is made using Low Carb flour like almond flour and coconut flour blended with mozzarella cheese and cream cheese with eggs. All the ingredients are placed in a food processor until a stiff dough is formed. The dough is easy to roll between two silicone mats and browns nicely in the oven with an egg wash brushed on top. The final baked product is very bread-like and Keto-friendly!
Can I add meat to this filling?
Yes! Feel free to add meat to this filling. Pairings that would work well would be ground sausage, pepperoni, or salami.
Can I add other cheeses?
While the mozzarella cheese and cream cheese in the fathead crust should not be substituted, you could substitute the mozzarella cheese in the filling for other melty cheeses like Pepper Jack, Colby Jack, and other similar kinds of shredded cheese.

Step 1
Preheat the oven to 375 F. Add 2 cups mozzarella cheese and 2 oz of cream cheese to a food processor. Add 1 cup of almond flour and 2 tbsp of coconut flour, and 1/4 tsp kosher salt. Blend the mixture well until it turns into a crumbly mixture.Step 2
Next, add one egg. Blend the mixture well. The mixture will turn into a stiff but workable dough. If the amount of dough that this recipe makes is too large to fit in your food processor, feel free to divide the ingredients in half and blend it in batches. If doing so, combine the dough into one dough afterward.Step 3
Place the dough between two silicone mats to form a circle about ⅜” to ½” thickness. If you do not have silicone mats, you can use parchment paper, but it won’t be as nonstick. To mitigate this, if using parchment paper, make sure the dough is cold. Place it between the two parchment paper sheets and then chill it in the fridge until firm before rolling it. Set the dough aside while you cook the spinach.Step 4
Heat a large nonstick skillet over medium heat. Add the avocado oil and swirl the pan to coat. Add the baby spinach and cook it until it is wilted. Allow the spinach to cool slightly.Step 5
Remove the top silicone mat. Spread 2 tbsp of marinara sauce onto one-half of the calzone. Add ¾ cup of mozzarella cheese and the sauteed spinach on top of the marinara sauce.Step 6
Use the silicone mat to fold the dough in half, enveloping the toppings. Crimp the dough around the edges, folding it over if possible and forming a thickened edge.Step 7
Scramble one egg with a fork in a small bowl. This will serve as an egg wash. Brush the top all over with the egg wash.Step 8
Bake the calzone for 30-32 minutes or until it is golden brown and baked through. Allow the calzone to cool slightly before cutting it into five slices. Serve immediately.
