Keto Cheese and Rice Burrito

This new twist on a vegetarian burrito is cheesy and delicious! Instead of adding cheese to the burrito, make the burrito with a tortilla wrap made of cheese. You can make your own Keto cheese wraps, but things will be a lot easier if you can purchase them at the store. Look for cheese wraps in refrigerated sections with other dairy products or near special vegetarian items. Inside this Keto burrito is a mix of seasoned cauliflower “rice”, shredded lettuce, and a spicy sauce. You can alter the recipe to include other burrito ingredients that you like, of course.

How to make the burrito less spicy

Most of the spice is held in the sauce added to the burrito. To make the sauce less spicy, use less Tabasco or choose a different hot sauce that you like better. If you’re particularly sensitive to peppery or spicy foods, you may also desire to use less cumin and paprika in the recipe.

Make your own cheese wrap

Preheat an oven to 375F (190C ) and line a baking sheet with parchment paper. Spread about ½ cup of shredded cheddar cheese into a thin circle on the parchment. Cook the cheese in your oven for about 8-10 minutes, but you’ll need to watch the cheese closely. Watch for the cheese to melt and bubble, but remove it from the oven before it starts to harden. Let the cheese cool entirely before using.

Other burrito ingredients you can use

Don’t ditch the recipe! Just make a few fun changes to the ingredients when you need something new to eat. Other burrito ingredients that are Keto-friendly may include avocado or guacamole, sour cream, pickled jalapenos, coleslaw, or salsa. Just make sure you don’t over-stuff your burrito so the wrap doesn’t tear.

    Heat olive oil in a pan on high heat before adding cauliflower rice. You can use frozen or fresh riced cauliflower. Season the pan with salt, pepper, onion powder, garlic powder, cumin, and paprika. Cook the rice until it’s golden brown all over.

    You’ll need to put the cauliflower rice in a cheese wrap, which can be found at grocery stores. You can also make your own - you will find directions for this in the recipe introduction. Once the cauliflower rice has cooled for a few minutes, add it to one side of your cheese wrap.

    Add shredded lettuce to the cauliflower rice in the cheese wrap. Next, stir together mayonnaise, tabasco sauce, and cumin in a small dish. Then, drizzle the sauce over the ingredients in the wrap. Roll up the cheese wrap like a burrito for serving.
