Easy Low-Carb Mascarpone Mousse
This wonderfully creamy, quick, low-carb dessert takes only 5 minutes to prepare and tastes absolutely fantastic. It's a lovely dessert that has 5g of net carbs per serving and will satisfy your sweet tooth. This light dessert can be served with various low-carb berries, low-carb jams, or sugar-free fruit sauces. You can also adjust the amount of sweetener according to your taste or add more or less vanilla extract. Our easy Keto mascarpone mousse is best when served cold, so we suggest refrigerating it for about 30 minutes before serving. Enjoy!
How to substitute mascarpone?
You can substitute mascarpone with the same amount of cream cheese for a slightly different but fantastic flavor.
Can I use some other type of sweetener?
Any type of your favorite powdered or liquid sweetener will work in this recipe. Adjust the amount according to your taste.
How to substitute heavy whipping cream?
A combination of half and half and butter is probably the best substitute for heavy whipping cream. Melt ¼ cup of butter in a double broiler or in a microwave and mix in ¾ cup of half and half for a cup of heavy whipping cream. Other substitutes include coconut cream or evaporated milk.

Add the mascarpone, heavy whipping cream, powdered sweetener, and vanilla extract to a bowl. Using a hand mixer with whisk attachments, beat on medium speed for a few minutes or until fully incorporated.Step 2
The mixture should double in size and become a light and airy mousse. You can adjust the amount of sweetener according to taste. You can also adjust the amount of vanilla.Step 3
Transfer the mousse to serving glasses or bowls using a piping bag. For the best results, refrigerate the mousse before serving. Another good idea is to chill the bowls before adding the mousse.Step 4

This is my favorite type of dessert: light, airy and delicious without the sugar. Made plain for myself and added a wee bit of chocolate syrup for my husband (who has more carbs budgeted). It was a huge hit.
