    Rinse and pat dry the cauliflower. Cut the cauliflower into smaller pieces. Add to a food processor and process until it resembles rice.

    Add the cauliflower rice to a bowl along with shredded mozzarella, oregano, and basil. Add half of the pepperoni and mix well to combine. Optionally, adjust the amount of herbs according to your taste.

    Preheat the oven to 350°F/175°C. Grease a 10x7-inch casserole dish with butter. Spread the mixture evenly over the base of the casserole dish.

    Not pork free (pepperoni). Using turkey pepperoni would change the macros.
