Celeriac (celery root), raw

Step 1
Cut the cauliflower into small florets. Add to a food processor. Pulse until it's broken into tiny pieces.Step 2
Finely chop the celery root, garlic, and parsley. Heat the olive oil in a large pan over medium-high heat. Add the celery root and parsley. Stir well and cook for 5 minutes.Step 3
Finely chop the chicken breast. Roughly chop the kale. Add the chicken breast, kale, and cauliflower to the pan. Season with salt and pepper and cook for 10 minutes, stirring occasionally.Step 4
Pour in the broth. Mix all well and reduce the heat to medium-low. Cook for 25 minutes.Step 5
Taste and optionally add some more salt or pepper. Transfer to serving bowls and serve immediately. Optionally, add a few drops of lemon juice before serving.

You can substitute kale with Swiss chard, spinach, green cabbage, bok choy, or broccoli. :)
