This lovely dish takes about 25 minutes to prepare (including the cooking!) and tastes fantastic! The recipe yields 4 servings, but you can double the amount of ingredients to prepare more. This dish is among the best easy Keto sides for beginners, as you don't need any special skills in the kitchen to prepare it. It can be served as a side to your favorite Keto-friendly main dishes (it pairs perfectly with baked shrimp or salmon fillet). Optionally, sprinkle everything with some more freshly shredded parmesan and garnish with parsley. Enjoy!

Absolutely! You can prepare it in advance, store it in an airtight container, and refrigerate it until ready to serve. Gently reheat on the stovetop when ready to serve. Enjoy!
Does this dish freeze well?
Unfortunately, we don't recommend freezing the zucchini noodles. They will lose their texture and won't taste the same. They can, however, be stored in the fridge for a few days.

Zucchini
2 medium
Garlic
2 clove
Butter
1 tbsp
Extra virgin olive oil
1 tbsp
Cream cheese
0.25 cup
Garlic powder
0.5 tsp
Parmesan cheese, fresh (hard)
3 tbsp, shredded
Parsley
1 tbsp

Step 1
Peel and mince the garlic. Add the butter and olive oil to a large pan and heat over medium heat. Add the garlic and cook for 1-2 minutes, stirring constantly.Step 2
Spiralize the zucchini. Add the zucchini to the pan with garlic and cook for 4-5 minutes or until tender. Remove from the pan and drain.Step 3
Add the cream cheese to the same pan. Reduce the heat to medium-low and gently melt the cheese. Stir constantly.Step 4
Shred the parmesan. Add the parmesan and garlic powder to the pan and mix well. Optionally, add some salt or black pepper to taste.Step 5
Return the zucchini to the pan and mix well. Transfer to serving plates. Garnish with parsley and, optionally, some more shredded parmesan. Enjoy!
