Step 1
Finely chop the chives. Grate the cheddar cheese using the large holes of a box grater, and set aside. Crack 3 eggs into a bowl and whisk well with a pinch of salt and pepper.Step 2
Add the oil and butter to a non-stick frying pan set over medium-low heat. Heat for a few minutes until the butter has melted and is foaming. Pour the eggs into the pan.Step 3
Cook for about 20 seconds, then use a spatula to gently scrape the outer edges to the middle to allow the runny egg to fill in the gaps in the pan. Cook until the egg has just set.Step 4
Fill the omelet with the grated cheese and chopped chives.Step 5
Use a spatula to fold gently in half or into a roll. Slide the omelet onto a plate to serve. Garnish with extra chive and a gride of black pepper (optional).
