Corned beef is a spring classic, especially around Saint Patrick’s Day. It is simple to make, especially when using a pressurized cooker like an Instant Pot. If you do not have one, simply cook the corned beef in a dutch oven over low heat for 2 ½ - 3 hours or until tender.

  • Step 1

    Place corned beef and any liquid from the packing into the bottom of an Instant pot. Add pickling spices, smashed garlic cloves, sliced yellow onion and water. Add an additional cup of water if you like corned beef less salty. Cook on high pressure for 75 minutes. Then release the steam.

    Add cabbage cut into wedges and the baby carrots. Cook on high pressure for 1 minute.

    Remove vegetables to a plate and slice corned beef to serve.

    I think I will cook my corned beef as always which is about the same here on the stove in a pot & enter the nutritional values & exact ounces per serving straight from the package. ( the best way ). The meat & cabbage should be very little carbs if none. The potatoes are the only thing you need to worry about. I usually go with the carbs of a small or medium boiled potato. Also you can substitute radishes for potatoes which I do a lot.

        Please give an ounce or gram amount for the serving. I ended up with only 2# of meat after pressure cooking. It was four # to start with. So 32 ounces divided by 12 is 2.66 ounces of meat and 44 ounces of cabbage divided by 12 is 3.66 ounces. 3 ounces of carrots divided by 12 is .25 of an ounce and I didn't eat the onions or the garlic.

        I guess I will guess the serving size is 3oz Corned Beef (Pkg. serving size) and then a half ounce of cabbage as the recipes serving weight is 3.5oz. Yeah... this recipe is a tease. I'm so close to not having to list these all out individually, and yet I still will have to :(

          Math says 151g of corned beef and 104g of cabbage is a serving. I didn't factor for carrots or onions as I don't eat them. But yes, yes I did just divide total recipe ingredients weight by 12 (total servings). Of course it's still inaccurate AND I shouldn't have to do it to begin with. Sigh.
