Step 1
Dice the tomatoes and chop the peppers, onion, and celery. Cut the mushrooms into quarters, slice the carrot into coins and mince the garlic. Set the crock pot on low setting.Step 2
Meanwhile, pat the beef dry on both sides and season with salt and pepper. In a large skillet, sear the meat in olive oil over medium heat until evenly browned on both sides. Once done, transfer to the crock pot.Step 3
In the same skillet, sauté the onion, garlic, and celery until soft and fragrant. Feel free to add a tablespoon or two of water to deglaze the pan to allow the onions to caramelize.Step 4
Add garlic powder, onion powder, dried oregano, and tomato paste. Stir for about 30 seconds. Add ½ cup of beef stock and scrape the bottom of the pan. Transfer the mixture to the crock pot.Step 5
To the crock pot, add the tomatoes, bell peppers, mushrooms, carrot, soy sauce, and the remaining ½ cup beef stock. Cook on high for 6-8 hours.Step 6
