Keto Chocolate Pistachio Donuts
These donuts are moist and delicious! They can be prepared by mixing them by hand or by a food processor. The food processor results in a smoother donut. Each donut is dipped into a warm ganache and sprinkled with crushed pistachios.

Ingredients
Almond Flour
1-¼ cup
Brown Sugar Replacement by Swerve
⅓ cup
Baking Powder
1 teaspoon
Special Dark 100% Cacao by Hershey's
3 tbsp.
Extra Virgin Olive Oil
3 tablespoon
All Natural Soy Milk Original Unsweetened by Silk
2 tablespoon
Vanilla Extract
1 teaspoon
Raw Egg
2 large
Coarse Kosher Salt by Morton
⅛ tsp
Chocolate Chips, Sugar Free
½ cup, whole pieces - regular
Heavy Cream
½ cup
Pistachio Nuts, Roasted, Salted

Step 1
Preheat an oven to 350 F. Combine all the dry ingredients for donuts. Whisk together.Step 2
Add in all the wet ingredients for the donuts and mix well with a spatula or spoon. Alternatively, you can blend everything in a food processor which results in a smoother donut.Step 3
Spray donut pan with nonstick cooking spray and fill donut pan with batter evenly.Step 4
Bake for 14-15 minutes until puffed and cooked through. Allow to cool completely before attempting to remove donuts from the pan.Place chocolate chips in a bowl. Heat cream in the microwave in a separate container until boiling. Pour over the chips and allow to sit for 5 minutes. After 5 minutes have elapsed, stir the cream into the chips into a ganache.Step 5
Dip the tops of donuts into the ganache and sprinkle with crushed pistachios.

Absolutely delicious! Texture is perfect, literally like a regular donut. I used lactose free milk instead because I didn't have soy. Will definitely make again.... Most likely once a month 😌
