For those who love lamb, our Keto Rogan Josh is just for you! The combination of spices in this tomato-based curry packs a serious punch along with the tender fall-apart lamb. While there are a lot of different spices in this dish, if you love Indian food, you will definitely use them again in other Keto Indian food recipes, and they are worth the investment. If you can, purchase organic spices from reputable brands to limit the amount of pesticides. Rogan Josh can optionally be served with yogurt to help cool the dish down, as it can be spicy depending on the type of chili powder that you use.
What is the best cut of lamb for this recipe?
The best cut of lamb for this recipe is lamb shoulder. Lamb shoulder is the best to use because it is marbled with fat which helps to add flavor, and is tender (and not dry) once slow-cooked for several hours.
Do I have to use ghee?
No, you do not have to use ghee for this recipe. We used ghee to give it a more authentic taste since ghee has a more sweet/concentrated butter flavor. You can find ghee at most supermarkets these days, and it gives a layer of richness and depth that is unique to Indian cuisine. If you want, you can substitute the ghee for another fat that can tolerate higher heat, like avocado oil.
What can you do with leftovers?
Leftovers can be placed into individual glass containers and stored in the refrigerator for meals that are perfect for work or school. This meal is also freezer friendly. You can also store cooled Rogan Josh in Ziploc bags. Then, lay them flat in the freezer so that freeze solid. Once solid, the Ziploc bag can be easily stored away. When you want to heat it up, you can run cool water over the Ziploc bag until partially thawed, and then it can be transferred to a stockpot and heated through.
Rogan Josh makes a delicious sauce. It is ideal to serve it with something to soak the sauce up, like cauliflower rice. You can also serve it with our Keto Naan Bread to wipe up any extra sauce!

Step 1
Cut the lamb shoulder into 1" cubes or slightly larger. Heat a large heavy-bottomed pot over medium-high heat until hot. Add in the ghee and swirl the pan to coat it. Add in the diced onion, minced garlic, and minced ginger. Turn the heat down to medium-low. You want the heat to be low enough to turn the onions translucent but high enough to brown slowly and evenly with time.Step 2
To the onion mixture, add all the spices. This includes cinnamon, ground cardamom, ground cloves, tomato paste, paprika, chili powder, ground coriander, ground cumin, turmeric powder, nutmeg, garam masala, and fennel powder. Stir well to combine. Continue cooking over low heat until the spices have caramelized with the onions. If the mixture looks a little dry, add a bit of ghee to moisten it. Cook the spices this way for 3-4 minutes until nicely toasted.Step 3
Add in the lamb shoulder. Add in the stock to slightly cover the lamb. Place the lid on the pot and allow the mixture to simmer gently. Stir the mixture occasionally. Continue cooking in this way until the lamb is nicely tender.Step 4
This process should take about 2 hours or longer, depending on the meat. If the mixture gets dry, add some water to barely cover the meat and continue cooking in this way. Once the meat starts to get tender, stop adding more water (assuming there is still some in the pot) and allow the sauce to condense around the meat into a sauce.Step 5
The meat should be very tender at this point. Once the meat is tender, allow the broth around the meat to simmer down into a thicker sauce. Do not add any additional water at this point so the water can cook down.Step 6
Serve Rogan Josh with cauliflower rice and any other Keto Indian sides you like. Enjoy immediately. Refrigerate or freeze leftovers (see note in the introduction on how to freeze). Enjoy!

Your missing the amount of onion to add so I just added half a small for 4 Serv. Oh My Gosh, this recipe is amazing!! Not too spicy. Yes, the serving size is quite small but you can eat 2 if you wanted. I paired mine with the coconut & lime cauliflower rice recipe. Divine combination. Full of flavours. Definitely will cook again.
