Keto Chunky Guacamole
This keto guacamole is loaded with heart healthy fats from avocado and extra virgin olive oil. The avocado is combined with juicy fresh tomatoes, refreshing cucumber, aromatic cilantro, sweet red onion and zesty lemon to create a chunky and flavorful guacamole.
This makes a great dip for low carb veggies or keto crackers as well as a topping for grilled meats or fish.

Avocado

Cilantro
1 tablespoon
Red Onion

Extra Virgin Olive Oil

Lemon Juice

Tomato
½ medium - 2 3/5" diameter
Cucumber
¼ cup
Salt, Sea Salt
¼ teaspoon
Black Pepper, Ground

Step 1
Peel and pit the avocado and add the flesh to a mixing bowl. Finely dice the tomato, cucumber and onion and finely chop the cilantro. Add to the bowl with the avocado. Add the olive oil, lemon juice, salt and pepper.Step 2
Roughly mash the chopped vegetables with the avocado, lemon juice and oil to create a chunky dip consistency. Refrigerate until ready to serve.
