Low Carb Hamburger Helper Skillet
If you have a group of hungry mouths to feed, nothing beats a weeknight dinner like an all-in-one skillet meal! This is also an excellent recipe to use for Keto meal prepping because you can make numerous servings in one skillet. The majority of your hamburger helper is made with just that: hamburger. The beef is stewed in a savory sauce, then you add Keto-friendly shirataki noodles to the skillet. Finally, the hamburger helper can’t be complete without a cheddar cheese sauce stirred in! You will put a smile on a kid’s face with this meal, or you can connect with your inner child and indulge in some comfort food.
What are shirataki noodles?
Shirataki noodles are made from a special yam flour that practically has zero carbs. Shirataki noodles come in different noodle shapes, like angel hair, fettuccine, and elbow noodles. You can find these special Keto noodles packaged in water in either the refrigerated or dry goods areas of grocery stores, so check both. Shirataki noodles may also be labeled as “miracle noodles”.

Step 1
Make the cheese sauce first by adding heavy cream and butter to a saucepot on the stove. Heat the ingredients until the butter melts and the cream starts to simmer. Adjust the heat so the pot is only just bubbling - not simmering or boiling. Whisk cheddar cheese into the pot until it all melts and the cheese sauce forms. Set this aside to thicken for later away from the heat.Step 2
In a skillet, break up ground beef with a wooden spoon and douse the beef in olive oil. Heat the skillet over high heat and cook the beef until it browns, stirring as necessary. Once the beef is browned, season the skillet with salt, pepper, onion powder, and garlic powder.Step 3
Pour Worcestershire sauce, tomato sauce, and beef broth into the skillet. Stir the ingredients, cover the skillet with a lid, and bring the ingredients to a simmer. Simmer the skillet until the sauce reduces and sticks to the beef.Step 4
Drain your shirataki noodles and rinse them. Add them to the skillet as well as all of your cheese sauce from step one. Gently fold the noodles and cheese sauce into the skillet until everything is combined. Keep the skillet at a simmer for a few minutes while the noodles cook and any excess moisture evaporates. Serve hot.
