We used fresh finely chopped salmon fillets for this recipe, but you can use canned salmon. Add some of your favorite herbs and spices, such as garlic, cayenne, or a teaspoon of dried thyme. Step 1
Finely chop the salmon. We used fresh salmon fillets for this recipe, but you can use canned salmon. Shred the parmesan cheese. Finely chop the parsley. Add the salmon, one egg, parmesan, parsley, salt, pepper, and coconut flour to a bowl. Mix to combine.Step 2
Preheat the oven to 180°C (355°F). Line a baking tray with parchment paper. Lightly grease your hands and divide the mixture into 8 equal pieces. Shape each piece into a croquette. Arrange the prepared croquettes on the prepared baking tray.Step 3
Crack the remaining egg into a bowl and whisk well. Lightly brush the croquettes with the whisked egg and sprinkle with almond flour. Gently turn each piece to coat well with almond flour. You can do this directly in the prepared baking tray to save time.Step 4
Bake for 25-30 minutes or until fully cooked through and golden. Remove the croquettes from the oven and serve immediately. These salmon croquettes pair perfectly with a fresh vegetable salad or your favorite Keto-friendly dips. Enjoy!

YUCK! They were dry and the coconut flour is not good with these.
