Mushrooms
1 cup
Leeks
½ cup
Unsalted Butter
½ tablespoon
Olive Oil
½ tablespoon
Salt, Sea Salt

Heat the olive oil in a skillet over a medium heat. Add the pancetta and cook until browned all over.Step 2
Whilst the pancetta is browning, thinly slice the leeks and mushrooms. Add them to the pan with the pancetta, butter, salt and pepper. Pan fry for 3-4 minutes or until the leeks and mushrooms are tender and the pancetta is cooked through and golden. Serve immediately.
