Step 1
Cut all your bread into small cubes, and leave the crusts on the bread. Fill an 11x7 glass baking dish with all the bread (no need to spray the pan). Set this aside for the next step.Step 2
Whisk together the almond milk, heavy cream, eggs, salt, cinnamon, nutmeg, and powdered erythritol in a large container or mixing bowl. Pour the wet batter into the glass dish, and fill it almost all the way. Make sure the bread gets soaked in the batter and doesn’t float on top.Step 3
Cover the dish with aluminum foil and put it in your refrigerator to soak for at least 15 minutes. This ensures the bread takes on the flavor of the batter, so it’s an important step. Preheat an oven to 350 F (180 C). Then, transfer the casserole dish from the refrigerator to the oven.Step 4
Bake the casserole for at least 60 minutes before removing the foil. Then, bake it for another 45 minutes without the foil on top. The entire top of the casserole should be golden brown and the casserole filling should test clean with a toothpick test. Slice into 6 slices after cooling.

Pretty tasty but because of the ingredients not terribly filling. Add some maple extract for an additional kick.
