    Add the erythritol, cream cheese, lemon juice and vanilla to a food processor. Blend until smooth and creamy.

    Add the cream to a mixing bowl and whisk vigorously until thick and fluffy. Alternatively you can use a stand mixer with whisk attachment to whip the cream.

    Carefully fold the lemon cream cheese mixture into the whipped cream until well combined. Refrigerate until ready to serve.

      Great and easy recipe. I made 1 serving, but used liquid Stevia instead of Erythritol, and cinnamon powder instead of vanilla extract. Then I added some raspberries and blackberries (which is great if you need to adjust your carbs at your keto day plan!)
