Low Carb Beef Burrito Casserole

Do you love burritos but not all the carbs? This Keto burrito casserole cuts down on calories and carbs by giving you more filling and less tortilla to eat. You’ll use Keto tortillas to create layers in the casserole, which are much lower in carbs than regular tortillas. The rest of the casserole is filled with seasoned ground beef, red salsa, lettuce, and melted cheese. The casserole slices taste really good with hot sauce, but you could also pair your meal with sour cream. Don’t forget that you can also use this Keto burrito recipe for your meal prep!

What are Keto tortillas made of?

Keto burritos can’t be made with regular tortillas. In order for a tortilla to be Keto, it will have to be made with almond flour or another alternative, low-carb flour. Keto tortillas may or may not contain eggs or other binding ingredients, but some may be vegan. Keto tortillas won’t be quite as flexible as tortillas made with wheat flour, but simply warm one up to make it easy to fill with your favorite burrito ingredients.

Do I have to make my own Keto tortillas?

No, you don’t have to make your own Keto tortillas to make this recipe. Keto tortillas can be sold in some grocery stores (they may also be labeled as “low-carb”).     Break up ground beef and season it with salt, pepper, onion powder, garlic powder, cumin, and cayenne pepper. Heat olive oil in a pan on high heat before adding the ground beef. Cook the beef through completely.

    Now, turn on an oven to preheat to 350 F (180 C) and select a 11x7 glass baking dish. Spread the first amount of salsa on the bottom of the pan. You’ll need about 1 ½ Keto tortillas to create the first layer of the casserole on top of the salsa.

    Spread about ¼ cup of salsa across the first layer of tortillas. Arrange 1 cup of shredded lettuce over the salsa. Add about half of your ground beef on top of the lettuce. Cover the beef with about a ½ cup of shredded cheese.

    Use another 1 ½ tortillas to make the next layer, and repeat step 3 to make a second layer of burrito casserole. Then, lay *another* 1 ½ tortilla on top of the casserole. Spread ¼ cup of salsa across the tortillas and top the casserole off with a final ½ cup of shredded cheese.

    Cover the dish with aluminum foil and bake the casserole for about 60 minutes. Then, remove the foil and bake for an additional 15 minutes to brown the edges of the casserole. Let the casserole cool for 5-10 minutes before slicing for serving.

    I thought this was delicious! The addition of sour cream makes it perfect.

      Pretty good. Didn't add the lettuce rather put it on top with some sour cream.
