Keto Mexican Egg Scramble
Mexican Egg Scramble sounds easy enough, but do you know how to make the fluffiest and softest eggs? Many would suggest stirring milk or cream into your egg yolks, but we don’t need those unnecessary additional carbs. Instead, melting butter into your skillet and continually stirring your eggs as they cook are a prime pair of tips for eggs you’ll want to be eating every morning. Some melty cheese and slightly spicy chorizo sausage make this a breakfast you can’t pass up!

Ingredients
Chorizo
3 ounce
Egg
4 large
Salt
⅛ teaspoon
Black Pepper
⅛ tsp
Spices Onion Powder
¼ tsp
Spices Garlic Powder
¼ tsp
Spices Paprika
½ tsp
Pepperjack Cheese
2 ounce
Butter
1 tablespoon
Cilantro, Raw, Coriander Leaves

Step 1
Heat a skillet on medium-high heat and place in the chorizo. Use a spatula to break up the meat and cook it to a crisp (but not burnt). Set the chorizo aside to cool and drain the extra fat from the pan.Step 2
In a bowl, whisk together the eggs, salt, pepper, onion powder, garlic powder, and paprika. Slice the cheese into thin slices and set this next to your bowl of egg.Step 3
Return the skillet to medium-low heat, and melt in the butter to deglaze the pan. Pour the egg mixture in the skillet. Continually stir the eggs with your spatula as they cook for fluffy and smooth eggs.Step 4
When the eggs are about halfway cooked through, place the cheese in the skillet. Continue stirring the cooking eggs until they are completely done.Step 5
To serve, divide the scrambled eggs across two plates. Top them evenly with the crumbled chorizo. Chop the cilantro and distribute this over the eggs as well. Enjoy!

Substituted andouille sausage and added chipotle chili powder for some more heat! My son, who isn’t following the keto diet enjoyed it so much that he asked for it again!

This was Yum! Foods like this make you forget you are on keto because it is so good. Forgot cilantro but it was still delish! The nutrition info is 100% off. Add each item manually when entering. It is no where near the amount of fat that is listed.

Calories on this are all way off. 2 eggs = 140 Cal. 1 1/2 oz chorizo is about 130. 1 oz pepper jack is 50. 1/2 tbsp of butter is 50. That's 370. Not 506. So if you are to eat 2 servings under these guidelines you will fall 272 calories short of where the recipe says you are. On top of that, protein and fat content are way off as well. This is a good recipe but manually enter ingredient's. Nutrition info listed here will throw you way off

Not sure what kind of Eggs you are using - but eggs are 60 cal each = 120 cal for 2 eggs
