Add 3 eggs to a small saucepan and cover with water. Bring to a boil and let simmer for 8 minutes. Place the eggs in an ice bath for 2 minutes.Step 2
Peel the eggs and place them on a cutting board. Cut into cubes and place in a bowl. Chop the dill and scallion and transfer them to the bowl. Add the mayonnaise, mustard, lemon juice, salt, and pepper and mix to combine.Step 3

This recipe is really fast easy to make if you buy some prepackaged hard boiled eggs. The flavor is very powerful and I’d recommend scaling back on the dill a little but it’s a really nice flavor.

I’m thinking this would be a good lunch idea thought to make chicken salad and stuff them in the avocados to make it chicken salad avocados sandwich
