Sometimes you just need a salty sweet fat bomb in your life! This recipe is written without sweetener, but you can add stevia drops to taste or a little erythritol. Since these fat bombs are no bake and egg free, feel free to taste along the way and add sweetener accordingly.

Ingredients

  • Cream Cheese, Brick

    Cream Cheese, Brick

    2 ounce

  • Peanut Butter

    Peanut Butter

    4 tablespoon

  • Coconut Oil

    Coconut Oil

    2 tablespoon

  • Cherries

    Cherries

    2 tablespoon, whole pieces

Recipe Steps

  • Step 1

    Mix together cream cheese and peanut butter in a bowl with a spoon or (ideally) a hand mixer until smooth.

    Slightly melt the coconut oil just so it is liquid but not warm or hot. Mix it into the peanut butter mixture.

  • Step 3

    Remove the pits and chop cherries and add them to the mixture along with salt. Add sweetener of choice to taste. Form into 6 balls and place on a piece of parchment.

    Refrigerate for at least an hour before enjoying.

                  try using refined coconut oil. There is not a coconut flavor if it is refined.

                  Coconut was the dominant flavor in these, and the cherries were almost non-existent. I used weight when adding all the ingredients and as specified, the coconut oil was liquid and just about room temperature. Maybe there is a difference in how strong different oils are in flavor? I won’t make these again when there are so many other recipes to give a shot.

                    Don’t use extra virgin coconut oil if yon don’t like coconut flavor. Tropical Traditions Expellar Pressed Coconut oil is steam deodorized so there is no taste or scent of coconut and this is the only one I will use in food. You can use the other as a body lotion—it removes brown spots on the skin from previously infested oxidized seed oils.

                          Ohhhh man!!! These are SO yummy! I don’t ever have to buy ice cream. I’ve been keeping them in the freezer. They are perfect that way. I’m going to try them with cinnamon too.
