What Kind of Coffee Should Use?
The recipe calls for one teaspoon of instant coffee, which is dissolved in the almond milk and cream over the stove. You may use any kind of instant coffee you prefer, granulated or powdered. You can also use a flavored coffee or decaffeinated option if desired.
Serving Suggestions

Gelatin (jello) powder, plain

Step 1
Add 1/4 cup almond milk to a small bowl. Sprinkle the gelatin powder over the almond milk and leave to bloom. Set aside while you prepare the other liquids.Step 2
Add the instant coffee, cream, the remaining 1/4 cup of almond milk and erythritol to a small saucepan. Bring to a simmer. Stir well to combine, dissolving the sweetener. You may add more or less sweetener as desired to suit your tastes.Step 3
Remove the warm liquid from the heat. Add the bloomed gelatin mixture to the pan. Whisk to combine until smooth, and the gelatin is fully incorporated.Step 4
Divide the coffee panna cotta evenly between two 8 ounce ramekins or pudding molds. Allow to cool a little, then transfer to the fridge to set. This will take up to four hours. The puddings should be set but with a slight wobble. Turn the puddings upside down onto a plate or bowl and tap the base firmly to release, then serve.
