Ingredients

  • Radish

  • Scallions

    Scallions

    2 medium - 4 1/8" long

  • Cilantro

    Cilantro

    1 tablespoon

  • Pak Choi

    Pak Choi

    1 head

  • Avocado

    Avocado

  • Cucumber

    ¼ large - 8 1/4" long

  • Step 1

    Slice the tough base from the pak choi and separate the leaves. Slice the large leaves in half and add to a pan of boiling water along with any smaller leaves. Simmer for 2-3 minutes until crisp tender. Drain and arrange in a large serving bowl to cool.

    Thinly slice the radishes and scallions and finely dice the avocado and cucumber. Add to the bowl with the pak choi and toss to combine.

    Flake the tuna into the salad and stir through.

    Drizzle the sesame ginger dressing over the salad and stir gently to coat.

    Scatter with fresh cilantro to serve.

    The flavours didn't work for me. I would substitute tuna for prawns.
