The ground beef we use is 80/20, which is the perfect ratio of lean meat to fat for this recipe. Onion, garlic, celery, and mushrooms are sauteed and then added to the meat mix. Along with some seasoning, these veggies add a beautiful taste and moisture to the meatloaf. The star of this meatloaf is the cheese. We are using 2 types, gruyere and parmesan, which add a ton of depth and richness. We don’t recommend omitting the cheeses, but you can replace them with milder types like mozzarella or cheddar.

This meatloaf is scrumptious on its own. However, if you’d like to eat it with a side dish, some great options include cauliflower mash, Keto mac and cheese, or a simple green salad.
Is this low-carb meatloaf gluten-free?
Yes, it is! Traditional non-Keto meatloaf contains breadcrumbs or wheat flour ( both containing gluten), to bind all the ingredients together. This Keto-friendly recipe, however, uses almond flour, which is 100% gluten-free.
Can you add the veggies to the meat mix without cooking them first?
We don’t recommend adding raw vegetables to the meat mix. Cooking the veggies helps release moisture and intensifies the flavors. If you add the vegetables without cooking them first, your Keto meatloaf will have too much water and might fall apart.

Step 1
Preheat the oven to 400F / 200 C and line a loaf pan with baking paper. To a food processor, add the onion, mushrooms, celery, and garlic. Pulse a couple of times until the vegetables are finely chopped.Step 2
Place a nonstick pan over medium-low heat and drizzle the olive oil. Add the processed vegetables to the pan. Cook for 2-3 minutes, stirring occasionally until the vegetables are soft and all the liquid has evaporated. Set aside to cool.Step 3
To a large bowl, add the beef, cheeses, eggs, almond flour, liquid aminos, and all seasoning. Once the veggies have cooled, add them to the bowl. Mix well to combine the ingredients.Step 4
Transfer the meat mixture to the lined loaf pan. Press to get the meat into the corners and smooth the surface. Bake for 40 minutes.Step 5
Take the loaf out of the oven, and brush the sugar-free ketchup on the surface of the meat. Turn on the broiler and return the meatloaf to the oven for 5 minutes. Take it out and let it rest for 15 minutes before removing it from the pan.Step 6
Transfer the meatloaf to a serving plate or board. Sprinkle some fresh parsley on top. Slice it into 10 pieces and serve immediately.

This is an excellent meatloaf. I had to make a couple of modifications because of a tree nut allergy. I replaced the almond flour with an equivalent amount of crushed pork skins and I used soy sauce instead of the liquid aminos.
