Low Carb Fathead Cinnamon Rolls

You will love these healthy low carb fathead cinnamon rolls! Our cinnamon rolls are made using a fathead dough from mozzarella cheese, cream cheese, and Low Carb flours like almond flour and coconut flour. The dough is rolled thin and sprinkled with brown sweetener and ground cinnamon. The dough is rolled tight into a swirled log and then cut into buns. The buns are placed into a casserole dish to brown nicely, and then they are brushed with a creamy, dreamy sweetener-based glaze. These rolls are best eaten warm, so curl up on the couch with a deliciously healthy cinnamon roll and a hot Keto coffee!

If you do not have a pan like this you can use a smaller casserole dish and place the cinnamon rolls side-by-side. Doing so will increase the bake time so please be aware of this. However, due to the gluten-free nature of this recipe they cook quicker if separated.

    Preheat an oven to 350 F. Prepare a 6-cavity cake pan with softened butter or an avocado oil spray. Set aside for now. Melt the cream cheese and mozzarella cheese in a microwave-safe bowl. Microwave on high for one minute until softened. Place the cheeses into the bowl of a food processor. Add in the eggs, flour, and ½ cup of sweetener. Blend well until a smooth, kneadable dough is created.

    Place the dough between two pieces of parchment paper and roll into a thin rectangle. Roll it as thin as it will go without the dough breaking or sticking to the paper. The dough should be about ⅜” thick.

    Once the dough is rolled thin, combine the brown sweetener and cinnamon in a bowl. Sprinkle the brown sugar sweetener evenly over the entire surface of the dough. Since these ingredients are relatively few calories, please feel free to add more sweetener and cinnamon if desired.

    Gently use the parchment paper to roll the dough up. Grab the paper and fold the dough over. Roll the dough with the paper as your guide, then pull the paper back to expose more dough as you go. Repeat until the entire roll is created.

    Cut off the ends to make a flat surface, then slice the cinnamon rolls into six sections using a sharp bread knife. Place them into the prepared cake pan.

    Bake the cinnamon rolls for 20-25 minutes or until they are golden brown. While the buns are baking, combine the powdered sweetener and milk. Spread this mixture on the hot cinnamon rolls to allow it to melt in. Serve warm.
