Keto Thanksgiving Roasted Tomatoes with Mozzarella and Parmesan Cheese
These cheesy tomato bites are one of the best Keto Thanksgiving recipes. Tomato slices are topped with mozzarella, parmesan, and fresh basil, then baked until the tomatoes are soft and the cheeses are golden. Not only is this recipe a great Thanksgiving appetizer, but it can also be served as a side dish on any day.
What type of tomato works best for this recipe?
The best tomatoes to use for these cheesy bites are ones that are ripe and in season. We have used roma tomatoes, but vine and heirloom would work too.
Can you prepare this Keto Thanksgiving appetizer ahead of time?
If you're preparing this appetizer as part of a Keto Thanksgiving menu, you could prepare it in advance to save time. Slice the tomatoes and place them on a lined baking sheet. Top with the shredded mozzarella and grated parmesan, and put the sheet in the fridge. When it's dinner time, drizzle with olive oil, sprinkle with some basil, then bake until the tomatoes are roasted, and the cheese is golden.
What cheese can you use for this recipe?
You can never go wrong with tomatoes and mozzarella; it's a classic combination. Adding parmesan and basil elevates these appetizer bites and will leave you wanting more. You can choose your preferred cheese, and some good options include gouda, pecorino Romano, provolone, gruyere, cheddar, and Swiss cheese. We recommend a mixture of mild and strong cheeses for a balanced flavor.
