Let’s put a little twist on Chinese fried rice! Goldened cauliflower rice is cooked with an assortment of greens and chilis. Just a few seasonings are needed, and the recipe allows you to add on extras at the end without blowing out your carbohydrates. Take caution, as this is a spicy dish!

  • Step 1

    Prep the Garlic clove, chilis, basil, and bok choy. Mince the garlic; slice the chilis into thin rounds (if you can’t access Thai chilis, serranos will work); chop the basil, and chop the leaves of the bok choy, discarding the hard stalks.

    Whisk together the egg in a bowl, and set this aside for later.

    Heat the cauliflower rice in a large skillet over high heat (if you’re using frozen cauliflower, use 2 cups of rice, as it reduces in size during cooking - this does not change the nutrition). Cook the rice with the soy sauce and fish sauce until the rice turns golden with a slight char.

    Stir in the olive oil, salt, ginger, onion powder, garlic, chilis, basil, and bok choy. Reduce the heat to a medium-low and cook the ingredients for 2 minutes, stirring to avoid burning.

    Finally, pour in the raw egg, stirring continually until the egg scrambles and cooks through.

    Serve hot with your choice of garnishes at your discretion: cilantro, sesame seeds, lime juice, chili sauce, extra basil, or green onion.

        Best keto recipe I’ve made so far! My husband didn’t even realize it was cauli rice until I told him! Cilantro and lime were a must at the end as well

          This smelled exactly like fried rice!!! It tasted so good! I didn't have the hot chili peppers bit I used some pepper flakes and it still gave it. Little heat but I think I'd would have been good even witj out any sort of peppers

              Really nice but does not need the added salt as the soy and fish sauce are already salty by themselves. Otherwise good

                I made this and it was best cauliflower rice i’ve had. It actually has a rice feel without the cauliflower flavor.

                    I do something similar with chicken or shrimp to get a protein kick, and adding a dash of sesame oil takes it over the top! Fantastic recipe!!!!
