Keto Thai Beef Pad See Ew
Ever heard of Thai pad see ew? It’s pronounced exactly as it appears! It’s equally delicious to eat and fun to say. This Keto Thai recipe is composed of shirataki noodles, which are made with a special Low Carb yam flour and lots of water. The noodles cook in a savory brown sauce along with stir-fried beef and veggies. No Asian noodle dish is finished without pieces of scrambled egg throughout too. Enjoy this hot meal to warm you and fill you up for lunch or dinner. It’s great for serving family-style at the dinner table or for your meal-prepping needs.
A note about oyster sauce
Please note that most generic bottles of oyster sauce you can purchase from a grocery store will include added sugar. A small amount is used in this recipe for flavoring purposes, so not many carbs are derived from this ingredient per serving. That said, you may either omit the oyster sauce entirely or substitute it with fish sauce. If you take this route, consider including a little extra Keto sweetener.
More Thai vegetables
To keep things interesting, consider changing the types of vegetables (or protein) you use in your pad see ew. For the sake of consistency, you may want to choose ingredients commonly used in Thailand. Some Keto vegetables you can consider substituting in your pad see ew are cabbage, eggplant, asparagus, Chinese broccoli, bean sprouts, or soybeans (edamame).

Step 1
Cut sirloin beef into thin strips if you can’t find this already prepared for you at the grocery store. Add the strips of beef to a bowl and add the first amount of soy sauce. Fold the beef strips over until they’re coated in soy sauce, then marinate the beef in your refrigerator for at least 1 hour.Step 2
After marinating the beef, prepare the other components of the recipe so the cooking process goes quickly. Whisk together soy sauce, oyster sauce, rice vinegar, and erythritol brown sugar in a small bowl. In a second bowl, whisk together the eggs. Have these items ready to go at the side of your stovetop.Step 3
Thin-slice mushrooms as well as freshly-washed bok choy. Combine your vegetables and set them aside with the other ingredients. To prepare the shirataki noodles, drain them from their packaging. Then, rinse and drain the noodles until they are clean and separated.Step 4
For cooking, use a wok if you have one available. Otherwise, use a large skillet or saute pan. Heat the wok or skillet on high heat on the stove until it’s smoking. Once the beef is browned, make a well in the center of the wok. Pour the whisked eggs into the wok, and let them cook undisturbed for about a minute. Once the egg is cooked halfway through, stir the wok to scramble the egg. Wait for all the eggs to finish cooking, then stir your prepared shirataki noodles into the wok. Follow by immediately pouring the sauce you prepared over the ingredients in the wok.Step 6
Stir the ingredients, and let the wok simmer and cook down for a few minutes. You’ll likely see excess water from the noodles, so wait for this to evaporate before moving on. Once the sauce has reduced to almost nothing, dump the sliced mushrooms and bok choy into the wok. Stir the ingredients, and let the vegetables cook down until they’re tender and wilted.Step 7
Again, you may see excess water in your wok from the vegetables, so cook the ingredients down until there is almost no liquid remaining. Stir all the noodles, beef, veggies, sauce, and eggs together to combine everything well. Serve hot.
