Ingredients
Olive Oil
2 tablespoon
Tahini
1-½ tablespoon
Avocado
1 cup, cubes
Garlic
1 clove
Lemon Juice Raw
1 tablespoon
Zucchini
½ cup, sliced
Salt
½ teaspoon

Step 1
Preheat the oven to 395 degrees Fahrenheit.Step 2
Slice the zucchini into ½ inch discs and arrange on a sheet pan. Drizzle with half a tablespoon of olive oil and transfer to the oven to roast for 15-18 minutes or until tender.Step 3
Transfer the zucchini to a plate to cool. Whilst cooling, dice the avocado into cubes and add to a food processor with the tahini, garlic, lemon juice and salt. Once cool, add the zucchini also.Step 4
Blend on a high setting until you have a thick and chunky paste.Step 5
Turn the food processor to a medium setting and slowly add in the olive oil, until you have a thick creamy hummus. Taste, and add further seasoning if required and extra olive oil if a smoother hummus is desired.Step 6
Cover and chill until ready to serve. This hummus is best eaten on the day of making.
