Keto Cheesy Spinach and Broccoli Casserole

This Keto side dish is the best way to utilize an abundance of green vegetables. You only need five ingredients other than your choice of vegetable, and you have a healthy and satiating vegetarian casserole. Serve it alongside your preferred cooked protein for a nutritious and balanced meal.

What main dish goes with this Keto casserole?

Any simple meal would pair well with this casserole. To keep it vegetarian, serve it with grilled tofu or cauliflower steak. If you're not concerned about keeping this dish vegetarian, try serving it with seared salmon, grilled chicken, or a juicy steak. You can even turn this casserole into a main dish by adding shredded chicken, cooked crumbled sausage, or tofu to the mix.

How can you customize this Keto vegetarian casserole?

The best Keto casserole recipes are ones that can be customized to your preference. Instead of spinach, you can use any leafy green like kale, beet greens, collard greens, Swiss chard, or turnip greens. Broccoli can be replaced with asparagus, brussel sprouts, cauliflower, cabbage, or zucchini. The cheese on top can be replaced by one of your favorites.

Can you adapt this casserole to a vegan diet?

Absolutely! A vegetarian dish on the menu is fantastic, but it's just as easy to make it vegan. Simply swap the mayonnaise with a vegan one and the cream cheese with vegan cream cheese, cashew cream, or coconut cream. As for the cheese topping, you can replace it with vegan cheese or some almond meal for a crunch.

What type of cheese is best for this recipe?

We used mozzarella cheese, but feel free to use any cheese you like. Shredded cheddar, gruyere, gouda, Mexican blend, or any other melty cheese would work.

which size casserole dishes are options?

Four portions as a main dish suggests an 8 inch square, 9 inch square pan, or pie plate. For deep dish servings I cram ingredients into a little old 1.5 quart Corelle casserole, although the picture shows a very thin serving, possibly in as large as a 9x13 inch pan. Whatever you have would work fine. Life is an adventure! If your fry pan is oven safe, bake it in that.🙂
