AIP Herby Turkey Meatballs

These simple herby meatballs are one of the best savory AIP snacks out there. They are juicy, nutritious, and packed full of protein. Prepared using a handful of ingredients, the meatballs are effortless and nothing short of delicious. You can prepare a large batch and store them in an airtight container in the fridge for up to 5 days.

How to customize these AIP meatballs?

You can adjust this snack to your liking as long as you use AIP-compliant ingredients. Swap the turkey meat for ground chicken, beef, or lamb. You can swap the herbs for mint, celery leaves, fresh spinach, coriander leaves, or basil. To help keep them intact, we used coconut flour, which you can swap with tapioca flour, tiger nut flour, or cassava flour. You can also include these meatballs in many AIP recipes like soups, stews, or salads.

What if you don’t have an air fryer?

Even though we used an air fryer for this recipe, you don’t need one to make this delicious snack. Preheat your oven to 200C/400F and line a baking sheet with parchment paper. Place the raw meatballs on the baking sheet and bake for 8-10 minutes, flipping halfway through.

Can you make these meatballs in advance?

These herby meatballs are an excellent make-ahead recipe. Prepare the mixture and store it in the fridge for a day, or freeze it for up to 3 months. You can also form the mixture into balls and freeze them separately for a quick fix. Feel free to cook them for any meal you prefer.

    To a food processor, add the parsley, dill, onion, and garlic. Pulse until fine but not completely minced. Transfer to a bowl.

    Add the ground turkey, lemon zest, lemon juice, coconut flour, and salt. Mix until evenly combined. Divide into 15 equal pieces and roll them into balls.

    Preheat your air fryer to 200C/400F for 5 minutes. Add the meatballs to the air fryer basket in one layer. If your air fryer is small, you will need to cook them in 2 batches.

    Cook the turkey meatballs for 4 minutes. Turn the pieces over and cook for another 4 minutes, until cooked through. Take the basket out of the oven and let the meatballs cool for 3-4 minutes before handling them.

    Transfer the meatballs to a serving plate. Serve with your preferred AIP dipping sauce, or enjoy them plain.
