These Keto Chocolate Mendiants are the perfect snacking chocolate! Chocolate Mendiants are French confections that are studded with nuts and fruits. These particular melted dark chocolates are topped with crispy pumpkin seeds, almond slices, and pistachios. The mendiants are put over the top by finishing them with some frozen blueberries as well. All the chocolate is frozen until crispy and ready to eat whenever your chocolate craving strikes!

What is the best dark chocolate to use?

I am partial to Lindt 90% dark chocolate, but please use your favorite Keto-friendly chocolate for this!

What other toppings can I add?

Feel free to use any other kinds of crushed nuts or low-carb fruits like raspberries or strawberries.

  • Roasted Shelled Pistachios With Sea Salt

  • Step 1

    Break up the dark chocolate into small pieces and place it into a microwave-safe bowl. Microwave on high for 30 seconds, stir well and repeat until fully melted.

    Then using a teaspoon-sized cookie scoop, place puddles of chocolate onto a parchment paper-lined baking sheet. Be sure the chocolate puddles do not touch each other.

    Top each puddle with an equal amount of nuts and frozen blueberries (about two blueberries each). Place the baking sheet in the freezer until firm. Enjoy
