Best Keto Breakfast Meat Egg Cups
Egg cups are such a simple and efficient way to prepare your breakfast. This Keto breakfast recipe is made with crispy bacon, chopped cooked ham, crumbly breakfast sausage, and seasoned egg. At your discretion, you could even add more chopped ingredients or cheese to the egg cups! Make this recipe on a Sunday so you have breakfast or a snack ready to go every day of the week! To reheat any leftover egg cups, simply microwave them with a paper towel laid over the tops to trap moisture. Heat for 15-20 seconds, and your breakfast is served!
Storage tips
Make sure the egg cups are fully cooled after cooking before you try to store them. You can either store the egg cups together in a sealed container or wrap them individually in plastic wrap. Keep the egg cups in your refrigerator for up to 3 days.
Other ingredients to add
At your discretion, you can add other ingredients to the egg cups. Just keep in mind to add them lightly so you don’t overfill the cups. Try adding diced peppers, mushrooms, onions, or some shredded cheddar cheese.
Breakfast meal prepping
Egg cups of any kind are great for meal prepping in the morning. Each serving is so low in carbs, you can eat up to two egg cups for breakfast. You can also eat just one and pair it with any of Carb Manager’s fat bomb recipes.

Step 1
Prepare your cooked breakfast meats by chopping them finely. The sausage should be crumbled into small pieces. The crispier your bacon and sausage are, the yummier this recipe will be!Step 2
Preheat an oven to 350 F (180 C). Next, whisk together the eggs and all remaining ingredients in a mixing bowl large, 2-cup measuring cup. Also, prepare six muffin tins with pan spray.Step 3
Distribute the breakfast meats inside the base of each muffin tin. You can mix the meats together or layer them on top of each other. Then, pour the egg mixture evenly over the meat so each muffin tin is filled to just below the brim.Step 4
Bake the egg cups for approximately 25 minutes in the oven or until the egg has cooked through and the tops are slightly golden. The eggs may rise significantly in the oven but will settle down once they can cool for a few minutes. Remove the egg cups from the muffin tins while warm and enjoy.

Using a water bath in the oven is a game changer for cooking these eggs. They come out moist/smooth when cooked with humidity. It took me a couple of tries to perfect it, but the water bath is really the key here

This recipe was easy and tasted quite good!

It is easier and faster to just use two eggs and scramble everything

I agree. Omelets are so fast and easy.

How do I store them? Refrigerate definitely but in what? Is Reynolds Wrap ok?

Glass containers. Avoid plastic & aluminum

Plastic storage containers are always useful. Tin foil works too

Great and easy recipe! My family loved it! Fluffy and Very filling. I did not added the ham as indicated in the recipe however, I added quarter cup of 2% milk to the eggs to make them more fluffy and 1 teaspoon of pepper jack cheese to each cup.
BigCarmine1930 a year ago
The 2% is not at all healthy. For fluffy, use a splash of water. The eggs will fluff like scrambled. Whole milk or cream will make eggs flat and dense like an omlet.

Probably should set in water bath. All of the posts say too thick, or bad texture, or tough. Obviously they need to be whipped more up front!

Yuk! Salty & texture is nasty.

Very good but a bit tough. What can I do next time to lighten the egg mixture…a dab of water maybe? Maybe there’s to much meat???

I'm going to try this recipe with a splash of water in the egg, more like scrambled egg mixture. Might also try tossing the meats on after the eggs are parcooked. I think maybe (for my tastes anyway) tossing a bit of diced green onion and peppers in the raw egg mixture might be tasty, and also help keep the egg mix fluffier and less dense. Just my thoughts.

I'd add some heavy cream and a little cream cheese... that's what my chef friend does...and they're DELICIOUS!!

Add 2 Tablespoons of almond milk & 1 teaspoon of baking Powder mix with an immersion blender (sticker blender) or in a blender then are super fluffy 😉

Outstanding and satisfying!. I did bake until it was slightly brown on top but it was a bit overcooked. Froze two muffins.

How were the frozen muffins after you reheated them. Did they taste any different from the refrigerated ones?

Do I have to have just one? Can I have a clementine or berries with it
SplendidSage 3 years ago
I doubled the batch to make a dozen. Omitted half the salt, but wish I had left it out completely, the salty meats add enough. Very good, but next time I'm going to add some cheese to help boost the flavor and adjust the spices! Nice and versatile recipe!

What is breakfast sausage please ?
mwhk66 3 years ago
It's basically seasoned minced pork

Breakfast sausage is a pork sausage. Jimmy Dean sells it by the pound usually. The packaging will say premium pork sausage. I usually get the one that says regular. They have others that are spicy. It's your preference the kind you get.

I use the silicone cupcake liners which make small cupcakes, but not the mini ones. They were a good size for my kids when they were little. I put the liners in a large frying pan add a little olive oil spray, add the ingredients and then add water to the bottom of the pan. I out in enough to cover the bottom half of the cups then I poach the egg cups. I haven't times it but I'm guessing about 10 minutes. This is so fast and easy and it's a quick snack. It's like a boiled egg so I don't need to heat it if I'm grabbing it one the run. These are a great snack.
