This sweet and savory Keto trail mix is packed with flavor, fats, and crunch! Our simple low carb snack is made with pecan halves, chopped pork rinds, pumpkin seeds, a little low carb sweetener, dried cranberries, and warming ground cinnamon. This makes a great low carb snack between meals, perfect for lunch boxes and when you are on the go.
Are Cranberries Keto?
Dried cranberries can be enjoyed in moderation as part of a healthy and balanced low carb diet. For this recipe, we have used just a tablespoon of cranberries to add extra sweetness and texture to complement the savory crunch of the nuts, seeds, and rinds. If preferred, you can omit the cranberries entirely or swap for some unsweetened chocolate chips. Please be sure to adjust your macros to account for any changes made to the original recipe.
What Sweetener Should I Use?
We have used a little erythritol to sweeten our low carb trail mix. The erythritol and cinnamon make a great contrast to the savory pork rinds and bring out the naturally sweet and buttery flavor of the pecans. You may use any granulated or powdered low carb sweetener you prefer. You can adjust quantities according to personal preference or omit entirely if preferred.

Pecans, raw

Extra virgin olive oil

Erythritol

Fried pork skins
1 cup, whole pieces
Reduced Sugar Craisin Dried Cranberries

Step 1
Preheat the oven to 350 degrees Fahrenheit and line a shallow oven tray with baking paper. Add the pecan halves to a mixing bowl. Add the olive oil, cinnamon, and erythritol. Mix well to coat the pecans in the sweetener and oil.Step 2
Arrange the pecans in an even layer across the prepared baking tray. Transfer to the oven and bake for 12 minutes until golden and toasted. Remove from the oven and set aside to cool completely.Step 3
While the pecans are cooling, roughly chop the cranberries and the pork rinds. Add the cooled pecans to a mixing bowl. Add the cranberries, pork rinds, and pumpkin seeds. Mix well to combine. Transfer to an airtight container until ready to serve.
