    Finely chop the peppers. Heat the olive oil in a large pan over medium heat. Add the bacon and peppers. Cook for 10-12 minutes, stirring occasionally.

    Peel and roughly chop the avocado. Slice the mushrooms. Roughly chop the parsley. Add the mushrooms, avocado, and parsley to the pan. Season with salt and pepper.

    Mix well and cook for 15-20 minutes over medium heat. Stir occasionally. Taste and optionally add some more salt or pepper.
